Food pairings

Recommended with meat-based appetizers and meat and
fish carpaccios. A classic companion for fresh pasta, even
better if stuffed, or with roasts and braised meats. Feathered
game is also a good fit.

Sensory profile

Fermented between 18° and 25°C with the addiction of
selected yeasts. The following maceration on the skins lasts
15 days and the pressing of the pomace is very delicate in
order to prevent extraction fo too green and astringent sents.
Bottled in September 2023, after one year in 25 hectoliters
french oach barrel. Intense ruby red color, with amaranth
nuances To the nose, it’s sharp, but not invasive. You can
smell red ripe fruits, a spicy scent and a good, clean presence
of tertiary scents. On the palate, you can detect a wellbalanced
combination of tannins and acidity, paired with the
typical sapidity given by the land of Hight Piedmont.
