Sensory profile
Gentle pressing in pneumonic press and maceration for no
more than 3 hours. Fermented on low temperature for longer
than 15 day. Steel refinement on the fine lees and bottled
within 6/7 months from harvest.Rosy in color, with the "onion
skin" orange reflections typical of Nebbiolo. The scent is that
of citrus fruits, rose and fresh red fruits that persist for long in
the glass. There is a fresh mouthfeel, accompanied by good
minerality, enhanced by the rosé vinification.

Food pairings
Excellent aperitif if it is paired with fresh cured meats and
baking. It’s perfect with risotto. For second courses, however,
a pairing with fish or white meats is preferable. If served with
cheeses, you can choose both fresh and medium-aged
products such as Toma or Gorgonzola
