Winemaking: Pre-fermenting in cold temperatures for 48 hours, cyclical refilling 3 times a day during the alcohol fermentation and for another week post fermentation.

Tasting notes: Brilliant purple color. Fresh opener, round, and full-bodied wine. Slight oak flavor on the mid-palate. 

Food Pairing: Ideal with terrine or pâté, smoked meats, lamb, beef, veal & stews, duck confit, or soft cheese.
